Ingredients
2 racks of pork ribs (about 4 pounds total)
2 tablespoons olive oil
1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon smoked paprika
1 cup barbecue sauce
1/2 cup apple cider vinegar
1/4 cup brown sugar
1 teaspoon chili powder
1 teaspoon cumin

Steps:
Prepare the ribs: Remove the membrane from the back of the ribs. Rub each rack with olive oil.
Season the ribs: In a small bowl, combine paprika, garlic powder, onion powder, black pepper, salt, and smoked paprika. Rub this spice mixture evenly over both sides of the ribs. Let them sit at room temperature for 30 minutes.
Preheat the oven: Preheat your oven to 275°F (135°C).
Slow-cook the ribs: Place the ribs on a baking sheet lined with foil. Cover with another piece of foil and bake for 3 hours, until the ribs are tender.
Prepare the barbecue sauce: While the ribs are cooking, combine the barbecue sauce, apple cider vinegar, brown sugar, chili powder, and cumin in a saucepan. Simmer over low heat for 10 minutes, stirring occasionally.
Grill the ribs: Preheat your grill to medium-high heat. Brush the ribs generously with the barbecue sauce and grill for 5-10 minutes per side, until the sauce is caramelized and slightly charred.
